Aam Panna, sometimes called ‘Kairi Panna’ in Hindi, is a traditional Indian summer drink made using boiled or roasted raw mangoes, seasoned with spices like roasted cumin powder, black salt, mint, and sugar or jaggery.   • ½ teaspoon regular salt

  • 10-15 fresh mint leaves

Method:

    Wash the raw mangoes thoroughly. You can either pressure cook them for 2-3 whistles or roast them over an open flame until the skin is charred and the flesh is soft. Allow them to cool completely.

  2. Extract the Pulp:

    Peel the skin off the cooled mangoes and squeeze out the soft pulp. Discard the seed.

  3. Make the Base:

    In a blender, add the mango pulp, jaggery/sugar, mint leaves, cumin powder, black salt, regular salt, and about half a cup of chilled water. Blend until smooth.

  4. Prepare the Drink:

    Transfer the blended pulp into a jug. Add the remaining chilled water and stir well. Adjust sweetness and salt as per your preference.

  5. Serve Chilled:

    Pour into glasses, add ice cubes, and garnish with a sprig of mint or a sprinkle of cumin powder.

Storage Tips

Aam Panna concentrate can be prepared in advance and stored in the refrigerator for up to a week. You can dilute it with chilled water whenever needed. Just ensure you store it in a clean, airtight glass bottle or jar.
